First, you might want to find out if you are celiac or if it is actually a wheat allergy. If it is a wheat allergy then you only need to avoid wheat...if you are celiac you will need to avoid other glutenous grains.

From my experience, I find allergies can shift over time. I become less allergic to some things over time, but also develop new allergies.

If you're finding that your wheat allergy is improving, you might want to get a new allergy test done from time to time....but don't test this by consuming wheat.

A lot of allergies are permanent, however, so don't get your hopes up too much. There are a lot of great alternatives to wheat right now if you're willing to do some cooking :). Look for gluten-free and wheat-free recipes and flour mixes.

Lisapj: I agree with you about the Canola, but not all soya is genetically modified. If you visit a health-food store you will find products made from non-GMO soya beans.

I was told I had wheat allergy and lactose intolerance, along with environmental disease, exzema all kinds of crap. I just changed my diet. It took 6 months to get all of the toxic crap out of my food. I went organic. I ate strictly organic. I DO NOT TOUCH ANY SOY. Soy is all genetically modified therefore toxic waste. I only eat meat from organic farmers. Buying by the half or quarter to keep the price down. All organic milk with Vitamin A & D is bad for me. The vitamins are made from Genetically Modified materials. Absolutely No Canola Oil, Have you ever eaten a Canola? Have you ever seen one? No because it is a genetically Modified rapeseed and it is highly toxic without being modified after being modified it is a highly toxic waste product. What to do? Contact your Local congress and demand they get Monsanto corp and the Bush family out of our food and make them pay to clean it up! It is all any of us can do.

Nothing will ever rid you of your wheat allergy; it's with you for life. You can eat pizza and everything else, but you'll have to use gluten-free products. Visit a health-food store and see how many options you have. And stop whining. It could be much, much worse. It could be cancer.

ETA: some of these answers may be dangerous. You should see a gastroenterologist to find out if you actually have celiac sprue or just an allergy to wheat. Either way, your diet will be pretty much the same - wheat products are in EVERYTHING. And obviously be guided by your doctor's instructions. Unchecked celiac disease can lead to colon cancer.

You can not get rid of food allergies. They are an immune reaction, and trying to "vaccinate" yourself against them by building up a tolerance to the allergen will only make the reaction stronger. Sometimes, you will experience a lighter reaction after you have avoided the allergen for some time, but if you start to eat it regularly again it will return as strong or stronger than it originally was. The best thing you can do is just avoid wheat. Allergic reactions are unpredictable, and may be worse than you expect. The next time you try to cheat your allergy, you could end up in the emergency room.

There are a lot of wheat alternatives available. Soy flour, tapioca flour, etc, can be substituted. You can still have pizza, you'll probably just need to make it yourself.

BTW, Celiac is completely different from a wheat allergy. Celiac is an intolerance to the *gluten* that is in wheat and has different symptoms than an allergic reaction.
